The processing technique for bottarga (tuna roe) involves pressing, salting, and drying very slowly.

An ideal seasoning for first courses such as "spaghetti with bottarga."

Sprinkle over spaghetti that has been drained and tossed with a sauce made from sautéed oil, garlic, parsley, and a few drops of lemon.

The company's history began back in 1931, when the young Gaetano Adelfio, arriving from Palermo to Marzamemi, decided to settle in this small fishing village.

The establishment was created in those years, during the Sicilian bluefin tuna fishing season, when tuna caught by mattanza was then salted. Alongside tuna, sardines and anchovies were also caught and salted.

Since then, the company has continued to offer the old flavours of the past, believing there is an inseparable link between culture, history, taste, tradition, and memory.
