Dried quince paste is an extraordinary preserve made throughout eastern Sicily. The recipe is a legacy of Spanish rule, and there is also a spreadable version, but the original remains the one dried in moulds. Eating it on its own is a delight; however, we recommend pairing it with cheeses, cured meats, and a good Marsala.

The Montelauro Company was founded in 2002 from the passion of its owners for cultivating various types of fruit trees on their lands located on the slopes of Monte Lauro, an extinct volcano. With the gradual expansion of the orchards, mainly focused on the quince tree, a continuously growing workshop was established to produce a preserve following the traditional "grandmother's" recipe.
