Canestrato with Occhipinti Chilli

In the lush countryside of the village of San Giacomo (in the province of Ragusa), among hills at 500 metres above sea level, where dry stone walls adorn fields of almond trees, carob trees, olive trees, and cereals, lies the Occhipinti farm. The Occhipinti family continues an ancient tradition of milk production and processing. Over forty years, they have transformed this longstanding tradition into a small family business. The animals are fed with high-quality feed and spontaneous pasture and forage from organic farming, ensuring consistent milk quality that retains all its unique nutritional and antioxidant properties in abundance.

From this milk come genuine dairy products typical of the Iblean farmhouses: ricotta, Ragusano cheese, provola, mozzarella, and many other dairy delights.
