Swordfish roe has a fairly delicate flavour and is ideal to serve as an appetizer, spread on canapés, or with first courses (excellent with fusilli).

The preparation is simple: lightly sauté some oil with a pinch of parsley (optionally add diced Pachino tomatoes), pour the roe into the oil for about a minute, then toss the sauce with the previously drained pasta in a pan to combine everything.

The company’s story began back in 1931, when the young Gaetano Adelfio, arriving from Palermo to Marzamemi, decided to settle in this small fishing village.

The factory was established in those years, during the Sicilian bluefin tuna fishing season, when the tuna, caught by traditional mattanza fishing, was then salted. Sardines and anchovies were also caught and salted alongside the tuna.

Since then, the company has continued to offer the old flavours of the past, believing in an unbreakable link between culture, history, taste, tradition, and memory.
