Busiata with Organic Russello Durum Wheat Pistachio
A traditional Sicilian pasta, Busiata is renowned for its distinctive spiral shape. Made from Russello variety durum wheat semolina, it is bronze-drawn and slowly dried at low temperatures. Naturally flavoured with Sicilian pistachio, it pairs perfectly with Di Fede's Roasted Courgette Cream.
Pastificio Minardo was established in 2007 as a small artisanal workshop with an organic focus, aiming to produce pasta made purely from Ancient Grains, cultivated and processed entirely in Sicily without the use of harmful substances.
The choice to use exclusively Ancient Grains, which are not well-suited to intensive farming, stems not only from a desire to revive a nearly lost tradition but also from the need to produce superior quality pasta, with low gluten content, highly digestible and rich in valuable nutrients.
Russello wheat is an ancient variety typical of Sicilian land. Characterised by a tall, fragile, reddish ear, it is grown in the arid soils of the Sicilian hinterland and is mainly used for making hard dough bread and bronze-drawn pasta, imparting a scent of grass and sun and a unique texture.
