The Purple Aubergine has a fairly round shape with tender and firm flesh.
With a decidedly sweeter flavour than its "Black Aubergine" counterpart, it does not need to be soaked in water, salt, and bicarbonate before use in cooking.
The season for Aubergines is summer, but thanks to the mild temperatures in our areas and greenhouse cultivation, it is easy to find aubergines all year round.
Aubergine = Caponata, Caponata = Sicily, Sicily = Summer! :)
